Why a Spray? Five Moments It Beats Pouring, and Two When It Doesn't

|Chandan

Quick answer: Use a spray when you need a thin, even coat rather than a pool of oil: eggs in a pan, an air-fryer basket, a dosa tawa, a roasting tray, a cake tin, or a top-up on dry spots halfway through cooking. Use the tin when you need enough oil to bloom spices, build a masala or fry. Magic is the same naturally refined avocado oil as Essential, just in a spray can, with no propellant.

Same oil, different tool

We made Magic for a simple reason. In our own kitchens, the moments we wasted the most oil weren't the big ones. They were the small ones: greasing a tawa between dosas, oiling a tray, "just a little" over vegetables that turned into a lot. A spray solves the small moments.

What's inside the can? Just avocado oil

Magic contains avocado oil only. No propellant. It uses a bag-on-valve system: the oil sits in a sealed pouch inside the can, and pressure around the pouch pushes it out when you press. Nothing else mixes with the oil you cook with.

My one daily use: eggs

Where do I use Magic most? Eggs. Every time. A press or two on the pan, and my omelette or fried egg slides right off. The bonus I didn't expect: my pan stays cleaner too, because there's no leftover pool of oil to burn on.

Moments the spray wins

Moment Why spray How many presses
Eggs: omelette, fried, bhurji A thin, even film so eggs don't stick 1–2
Air frying Covers every ridge and crumb evenly 3–4, toss, repeat if dry
Dosa, chilla, paratha on tawa Refreshes the surface between each one 1–2 per round
Rotis, straight off the tawa A light sheen instead of a spoonful of ghee 1
Roasting vegetables Catches dry corners of gobi, okra, potatoes 4–6 per tray
Baking tins and parchment Greases evenly without a brush or mess 2–3
Grilling paneer, corn, tikka Light coat without dripping onto the flame 2–3 per side

Each press is roughly a quarter of a gram of oil. You can count exactly how much goes in.

Two moments the tin is better

  • Tadka and masala-building: spices need a pool of hot oil to bloom. Pour from the Essential tin.
  • Deep- or shallow-frying: you need depth, not a mist.

Pour it when you need more. Spray it when you need just enough.

Getting an even coat

  1. Hold the can upright.
  2. Spray the food or a cool-to-warm pan from a short distance, away from an open flame.
  3. Sweep across instead of holding on one spot.
  4. Stop when the surface looks lightly glossy, not wet.

Spray and portions

A spray can make a small amount easier to spread, which helps if you're mindful of how much oil you use. But spray isn't calorie-free. It's still oil, just measured in small, visible amounts.
