Quick answer: Avocado oil is versatile, but it isn't magic. The best quality can't also be the cheapest, a high smoke point doesn't make overheating safe, the fridge test doesn't prove purity, cold-pressed isn't best for every job, and spray is still oil. Good choices come from matching the oil to the technique and asking for proof you can check.
The myth I still can't make sense of
In conversations with stores and partners, I hear one belief more than any other: that there's an avocado oil out there that's both the best quality and the cheapest. I still don't understand how both can be true at once. Twenty weeks into this journal, it felt like the right myth to start with.
1. "The best quality can also be the cheapest."
Hard to see how. Here's the raw maths behind one 450 ml tin:
| Cost driver | Why it's there |
|---|---|
| The fruit | Avocados yield only 12–20% oil, far less than seeds or grains. It takes 11 to 15 Hass avocados to fill one tin. |
| Importing | Hass avocados are grown mainly outside India, and to our knowledge, naturally refining avocado oil isn't yet established here. So our oil is pressed and refined in Spain. |
| Customs duty | Duty alone adds about 57% to the landed cost. On every ₹1,000 of oil we import, about ₹570 goes straight to Indian customs. |
| Testing | Every batch is tested at a lab in Málaga, then independently verified by an NABL-accredited lab in Chennai, before a single tin is filled. Two rounds of cost before a batch is even approved to pack. |
| Packaging | Tins and aluminium spray cans cost more than plastic, on purpose: they block light and air, so the oil reaches you fresher. |
India is also a price-sensitive market, and premium oils sold far below what these costs allow are exactly where adulteration tends to creep in. So if an avocado oil is much cheaper than this maths makes possible, it's fair to ask which step was skipped. Real sourcing. Real testing. Real duty.
2. "A high price proves it's genuine."
Also false. Research abroad has found expensive avocado oils that failed purity tests. Price alone tells you very little either way. Ask for batch-linked lab reports instead.
3. "All avocado oil is the same."
False. Naturally refined and extra virgin differ in taste, heat tolerance and best use. Origin, freshness and testing vary between brands too.
4. "Cold-pressed is always better."
Depends on the job. Cold-pressed keeps more flavour and is ideal for finishing. Naturally refined is the better tool for high-heat, neutral Indian cooking. The full trade-off.
5. "Refined means chemically extracted."
False. Extraction and refining are separate steps. Ours is mechanically extracted and naturally refined, with no solvents. What zero hexane means.
6. "A high smoke point means I can't overheat it."
False. It gives you margin, not permission. Cook below visible smoke.
7. "The fridge test proves purity."
False. Clouding depends on fat composition, temperature and time. Only lab testing can authenticate oil.
8. "Green means better quality."
False. Colour changes with ripeness, filtering and refining. Pale, naturally refined oil isn't inferior; it's a different grade.
9. "Avocado oil spray has no calories."
False. It's oil in small, controlled amounts. Each press of Magic is about a quarter of a gram.
10. "Good fat means I can use as much as I like."
False. All oil is energy-dense. ICMR–NIN suggests about 20–50 g of visible fat a day depending on energy needs. More here.
And one more: "One oil should replace every other fat."
Keep ghee, mustard and coconut oil where they define the dish. Avocado oil is for the everyday cooking where the oil should stay in the background.
The one thing that isn't a myth
You can check what's in your tin. Find the batch code on the back, enter it on Know Your Batch, and read the lab results for that exact oil. Don't take our word for it. Check your batch.
Frequently asked questions
Why does avocado oil cost more than sunflower oil?
Avocados yield only 12–20% oil, so one tin needs 11 to 15 of them. The oil is imported, customs duty adds about 57% to its landed cost, and every batch is tested in two labs before it's filled.
Why not make avocado oil in India?
Hass avocados are grown mainly outside India today, and naturally refining avocado oil isn't yet established here. We're rooting for India's avocado story to grow.
Is avocado oil a seed oil?
No. It's pressed from the fruit's flesh.
How can I verify purity?
Batch-linked lab reports from a competent, independent laboratory.
